My Oh My, Macaroni Pie! {Yummy & Unique Recipe}



Who ever heard of macaroni pie?!  Not me, but when I saw Marion Scotto making this on TV recently I knew I had to give it a try.  Not only was it delicious, it was super easy.  Here's the recipe:

Ingredients:
1 pound penne pasta (I used 1 lb whole wheat macaroni)
1 tablespoon unsalted butter (I used Pam spray)
1/4 cup olive oil, plus 1 tablespoon
1 garlic clove, peeled and minced (I used 1 tsp chopped from a jar)
1/2 cup diced Genoa salami
1 cup crumbled and browned sweet Italian sausage (I used a whole pound)
2 bunches spinach, washed and stemmed (I used one box frozen chopped/thawed with water pressed out)
1 cup mozzarella, cut into 1/2-inch cubes (I used 3 cups shredded)
1 cup ricotta (I used 3 cups)
6 large eggs, beaten
1 cup grated Parmigiano reggiano, leaving 1/4 cup for topping (I used regular parm)
Salt and freshly ground black pepper

 
Directions:
1.  Preheat oven to 350 degrees F.
2.  Grease the inside of an 8-inch spring form pan and set aside.
3.  Cook pasta, then toss with salt, pepper and tbsp OO and set aside.
4.  In a large skillet heat ¼ cup OO over medium heat till smoking.  Add the garlic and sauté until golden, about 2 minutes.  Add the spinach and reduce heat to medium.  Season with salt and pepper and cook, stirring occasionally, until spinach is wilted, about 3 minutes.  Remove spinach to a cutting board, chop coarsely, and add to the mixing bowl with pasta.
5.  Toss pasta and spinach together, and then add the cheeses, meats and beaten eggs.  Fold mixture until it is uniformly dressed then transfer to spring form pan.
6.  Bake for 60 minutes, until the top is golden brown and firm to the touch.
7.  Let cool for 5 to 10 minutes then remove from spring form pan.  Serve warm or at room temperature topped with grated Parmigiano reggiano.
8.  Enjoy the ooowey gooey, creamy deliciousness!

That looks good, but I made a spaghetti pie once and it was horrifyingly aweful. The dog didn't even eat it, so I am sort of wary of pasta pies! LOL!
