Blueberry Picking & Pie



It's blueberry season here in Florida!

Lucky for us, Mark's Blueberry Farm is just three miles from our place.

Last week we took advantage of a picture-perfect morning ~ sunny, breezy and only about 80 degrees (cool for this time of the year!) and went blueberry picking.  It was awesome!


We grabbed buckets and headed into the fields where the lush green bushes were literally bursting with ba-zillions of plump, ripe blueberries.

We were encouraged to taste the berries, as documented here by our self portrait:

We picked four pounds.  Not sure how many we tasted!

When we got home I baked a blueberry pie.


I like any blueberry pie.  Blueberries from a can, blueberries from the grocery, it doesn't matter.  But nothing's better than a pie with fresh-from-the-farm blueberries!

Here's the super simple recipe if you'd like to give it a try:

BLUEBERRY PIE
Ingredients:
3 cups blueberries
1/2 cup sugar
3 tablespoons cornstarch
2 teaspoon lemon juice
1/4 teaspoon cinnamon

Directions:
1. Place 2 cups blueberries into pie crust


2. Crush remaining 1 cup blueberries


3. Add sugar, corn starch, lemon juice and cinnamon to crushed berries and gently mix with a spoon then pour mixture onto blueberries in the pie crust.



4. Add a pat of butter into pie
5. Place top crust onto pie, vent crust, brush with beaten egg, and sprinkle about a teaspoon of sugar on top
6. Bake in 425 degree oven for 20 minutes then reduce temp to 350 and continue baking for 20-25 minutes
7. Enjoy!


Please don't be frigthened by my ugly crust (gawd, I need to learn how to make a better looking crust!).  The pie is delicious!

I had the last piece for breakfast this morning.  Yeah, I'm bad.  But it was sooooo good!
