Nothing better than piping hot, fresh from the oven and smothered in butter cornbread ~ yumo!
I've always liked cornbread but learned a little "secret" to making it even better. Captain Project and his buds used to participate in the annual Chili Cookoff in Stone Mountain, Georgia when we lived in Atlanta. To their chargrin, they never won an award for their chili concoctions but they did for their cornbread!
Turns out the secret is adding just a little bit of honey and brown sugar! I like to use Jiffy brand cornbread mix. I dump two boxes into a bowl, crush the lumps with a fork, add milk and eggs according to package directions then add approximately 1/2 teaspoon of honey and 1 teaspoon of dark brown sugar. Don't add too much more (I've tried) because it'll change the texture of the bread.
It's soooo good! There was one lonely piece left when I went into our kitchen this morning. It looked so pitiful (don't judge me, I was just trying to put it out of its misery!).
One of the tastiest breakfasts I've had in a long time!

Cindy, my hubby is a southern boy so for us it's cornbread in milk- like a cereal! I add 1/2 cup of honey to my batch and I add 1/4 whole wheat. It's so yummy!

MMM MMMM MMMM I only ever use Jiffy for cornbread, but I have never added the honey and brown sugar, I am gonna have to try it soon, we love cornbread here too.
ReplyDeleteThat does sound good, I am going to try this! We do this too...a box of corn bread mix according to the directions...a box of yellow cake mix with pudding in it according to directions...mix them together and bake either in the oven or in a dutch oven....So good!!! :D
ReplyDeleteI love cornbread also, but my recipe is so loaded with butter and sugar, it is hardly diet food. So good, real comfort food.
ReplyDeleteI'm a cornbread lover too but I never thought of having it for breakfast. I don't like my cornbread sweet. Even the Jiffy mix is too sweet for my taste. I guess it's just a southern thing. We like the sugar in our iced tea instead. :)

I can't believe it. I make the same double recipe only I don't add honey or brown sugar I add a tbs. of oil. We love it.

Oh, my came by to let you know I sent you message and I find this incredible post...I loooove cornbread "sweet" cornbread and especially for breakfast, with lots of butter and piping hot too! I am definitely trying this recipe.. I love Jiffy brand too! :) lots of love... Patti
ReplyDeleteLove cornbread too! I have never tried the Jiffy. My grandmother taught me as a little girl how to make cornbread and I use the same recipe everytime except when I make Mexican cornbread with a little sugar.

I love cornbread, too! I use Jiffy and will definitly give your 'secret' a try! My mother and grandmother always made it from scratch, but I just never got the hang of it. My grandparents ate cornbread broke up with milk poured over it every night for their supper. Twyla
